Indian Summer Turkey Chili

This is a very great take on normal chili! It has a sweetness to it and a little uuumph that makes it delish! My kids love this, especially when served with tortilla chips. It can also be used as a burrito filling in flour tortillas (whole wheat of course). I love versatile recipes!

Indian Summer Turkey Chili

1 tbsp. EVOO

1 pound ground turkey

2 tbsp. chili powder

1 tbsp. grill seasoning, any blend

1 tablespoon ground cumin

1 tbsp. Worcestershire sauce

1 onion, chopped

1 green pepper, chopped

1/2 can or 1 cup beer, any kind

1 14oz can tomato sauce

1/4 c BBQ sauce

1 14oz can cannellini beans, drained & rinsed

1 14oz can black beans, drained & rinsed

1 14oz can chili beans, undrained

1 cup frozen corn

Heat a large pot or dutch oven over medium to medium high heat. Add EVOO and ground turkey. Season turkey with chili powder, grill seasoning, cumin, and Worcestershire sauce. Break up meat into small crumbles and cook for about 5 minutes.

Add onions and peppers and cook about another 10 minutes. Add beer to deglaze the pan and cook off alcohol. Add tomato sauce and BBQ sauce. Stir. Add beans and corn. Stir. Bring to a bubble and then simmer on low for 10-15 minutes. Serve and Enjoy!!!

Crispy Corn Flake Chicken

Standard

crispy corn flake chicken

Now that I am back into normal mode and cooking at home again I can post my recipes! We were camping the last week for the holiday and I cooked outside on the grill the whole time. Don’t get me wrong, I LOVE LOVE LOVE grilling, but it is good to be home and back in my kitchen!Tonight we had Crispy Corn Flake Chicken served with roasted potatoes and steamed broccoli! Yum!

Crispy Corn Flake Chicken

8 chicken thighs, bone in, skin removed

1 cup buttermilk

2 cups crushed corn flakes

1/2 cup grated parmesan cheese

1 tsp garlic powder

1 tsp onion powder

salt and pepper

Place chicken in Ziploc bag and sprinkle with salt and pepper. Pour buttermilk over chicken. Seal bag and toss to coat chicken. Marinade in fridge for at least an hour. The longer the better! You could marinate all day or even over night. Place corn flakes, parmesan cheese, garlic powder, onion powder and some salt and pepper in another Ziploc bag. Remove chicken from marinade shaking off the excess. Place chicken one at a time in the corn flake mix and shake to coat. Place chicken on sprayed cooling rack in baking sheet. Repeat until all chicken is coated. Lightly spray chicken with cooking spray. Bake for 45 min at 400 degrees. Enjoy!!

Sorry I have been MIA for awhile. We were on vacation and busy with other things. We have basically been living on grilled food. Grilled burgers, pork chops, steaks and lots of chicken. I will have new recipes to post soon! Thanks for your patience!
