Crispy Corn Flake Chicken

Now that I am back into normal mode and cooking at home again I can post my recipes! We were camping the last week for the holiday and I cooked outside on the grill the whole time. Don’t get me wrong, I LOVE LOVE LOVE grilling, but it is good to be home and back in my kitchen!Tonight we had Crispy Corn Flake Chicken served with roasted potatoes and steamed broccoli! Yum!

Crispy Corn Flake Chicken

8 chicken thighs, bone in, skin removed

1 cup buttermilk

2 cups crushed corn flakes

1/2 cup grated parmesan cheese

1 tsp garlic powder

1 tsp onion powder

salt and pepper

Place chicken in Ziploc bag and sprinkle with salt and pepper. Pour buttermilk over chicken. Seal bag and toss to coat chicken. Marinade in fridge for at least an hour. The longer the better! You could marinate all day or even over night. Place corn flakes, parmesan cheese, garlic powder, onion powder and some salt and pepper in another Ziploc bag. Remove chicken from marinade shaking off the excess. Place chicken one at a time in the corn flake mix and shake to coat. Place chicken on sprayed cooling rack in baking sheet. Repeat until all chicken is coated. Lightly spray chicken with cooking spray. Bake for 45 min at 400 degrees. Enjoy!!
